There are three different switches here, and they don't overlap: one keeps the notetaker off a single appointment, one pulls it out of a call already underway, and one takes it off a whole calendar. Reach for the one that matches what you actually want to stop.

Open the event and edit it. The Record With Notetaker field offers three choices: Use calendar setting, On, or Off. Set it to Off and the notetaker skips that one appointment even while auto-join is on for the calendar it's sitting on. This is the setting to reach for before a call happens, when you already know it shouldn't be recorded.
Remove It From a Meeting Already Running
If the notetaker already joined, or is about to, open the event and use Remove Notetaker in its detail popover. The same control works whether the bot is still waiting to be let in or is already in the call recording. For a meeting you're watching from Calendar's Meetings tab instead, the open recording carries its own Stop Notetaker button, which pulls the bot out mid-call without touching the appointment itself. Either way, whatever was captured up to that point stays on the meeting's row; nothing is recorded after it leaves.
Leave It in the Waiting Room
Some video platforms hold every guest in a waiting room before the host lets them in, and the notetaker is no exception. If you simply never admit it, it never starts recording, which is a quiet way to keep one call clean without changing any setting at all. It's worth going back and removing it properly afterward though: left unadmitted, the notetaker eventually gives up and the meeting's row is left showing why it never got in.
Turn Off a Whole Calendar
Auto-join only records calls on calendars you've explicitly marked eligible. Open the gear icon on the Meetings tab, and under Calendars It Joins, switch a calendar off. Every call on that calendar stops being auto-joined from then on; existing recaps aren't touched, and a per-event On still overrides this and sends the notetaker anyway.
What Is Kept From a Call It Never Joined
Turning the notetaker off doesn't erase the appointment. Your calendar event, its guests, and its meeting link all stay exactly as they were. What's missing is only what the notetaker would have produced: no recording, no transcript, and no recap on the meeting's row, because there's no meeting row to begin with. Nothing about the call reaches your CRM or a deal on its own; if something needs to be captured, you're writing it down or filing it yourself.
